TOMATO, STRAWBERRY AND SPICY FRESH PRAWN BALL GAZPACHO

GAZPACHO |
|
4 kg. plum tomatoes (choose very red ones) 2 kg. ripe strawberries 2 green peppers (1 if big) 1 onion 1 clove of garlic 1 litre orange juice (normal breakfast orange juice) 250 gr. sugar Virgin olive oil, Jerez vinegar and salt.
Blend all ingredients together and strain.
Leave to cool. |

SPICY FRESH PRAWN BALLS |
|
1 kg. shelled and chopped prawns Juice of two lemons 100 gr. washed onion (very finely chopped) 1 bunch of chopped spring onions Salt, freshly-ground pepper and virgin olive oil.
Form small marble-sized balls and freeze. |

|
Place six of these balls on plate and decorate each one with a sprig of chervil and a splash of olive oil.
Pour cool gazpacho on top. |
