Canapes of Serrano Ham and fried oranges segments

INGREDIENTS FOR 6 PERSONS |

250 g. of Consortium serrano ham in small, thin slices 1 orange 20 salted crackers 1 cooked eggwhite, diced Chives 1 beaten egg Flour Olive oll 6 garden tomatoes |

PREPARATION: |

Peel the orange and separate the segments. Dust with flour and dip in the beaten egg; deep fry them. Drain on absorbent kitchen paper and cut in half. Put a piece of ham and a plece of orange on each cracker. Sprinkle with chives and some of the diced egg white. Add a piece of tomato to each canape and serve.
