Hake with Albufera Sauce
 
     
 
INGREDIENTS:
  350 g Clean fresh hake
10 g Coosur oil
10 g Peeled garlic
10 g Parsley
5 g Cayenne pepper
10 g Seeds
15 g Bread
1 Chili
Fumet
1 Medium potato
110 g Fine mussles
   
METHOD:
  Flour the hake and brown in oil
Remove from the flame and in the same oil, fry the bread, seeds and Cayenne pepper.
Place it in a mortar and add the parsley
Disolve this in a little fumet (fish stock) and incorporate the potato, previously cut into pieces and cooked, mussles and hake.
If necessary, add a little wheatmeal
