SPANISH RUBBED PRAWNS


 
     
 
INGREDIENTS:
  1 kg whole cleaned tiger prawns (shell on)
juice of 1 lemon

   
Marinade:
  6 tbsp extra-virgin olive oil
2 tbsp Spanish Rub
4 cloves crushed garlic
zest of 1 lemon
sea salt
freshly ground black pepper

   
METHOD:
  Slice through the shell on the top of the tail to remove the digestive tract.

Combine the marinade ingredients and rub into the prawns.  Leave to marinade for ½ hour.  Sear the prawns in a large hot pan for approximately 3 minutes on each side.  Be sure that the prawns have turned pink all over and are just cooked through, but not overcooked!  Squeeze the lemon over the cooked prawns, sprinkle with another pinch of sea salt and serve with freshly baked bread mop up the juices!






   
  Note:  Use your own imagination to add to the flavour, for example roasted shallots (see picture), olives, sun-dried tomatoes etc.
