POTATOES WITH EGGS IN THE LUCIO STYLE

2 kg potatoes 6 eggs Oil Salt |

Preperation |
|
Peel, sclice and salt the potatoes whilst the oil is heating up in a pan. Add the potatoes when the oil is quite hot, and arrange them in a serving dish when fried. In another pan, fry the eggs "al sofocón" (that is, when the oil is very hot, so that they fry quickly). Place them on top of the potatoes and break them up so that they mix in well.
Serve inmediately. |
